How to cook a Boeuf bourguignon ?

List of ingredients for 6 people

Preparation time: 30 minutes

Cooking time: 3 hours

  • 700 g beef cheek cut into cubes by the butcher
  • 700 g of chuck cut into cubes by the butcher
  • 200 g bacon
  • 30 g butter
  • 3 carrots
  • 3 large onions
  • 1 clove of garlic
  • 1 bouquet garni (leek green, thyme, bay leaf)
  • 1 bottle of red Burgundy
  • 5 black peppercorns
  • Salt, ground pepper
  • Sunflower oil

Preparation steps

In a bowl mix the wine, the Burgundy marc, the bouquet garni, the peppercorns and 1 tablespoon of sunflower oil.

Peel the carrots, then cut them into quarters and add them to the marinade. Remove the rind from the bacon, cut it into bacon. Peel the onions, slice them coarsely. In a casserole dish, fry them with the bacon in 20 g of butter and 1 tablespoon of oil until golden brown. Dispose of it all on a plate.

In the same casserole dish, brown the meat cubes on all sides. Put the onions and bacon back in. Pour the marinade with the bouquet garni. Bring to a boil, then add the peeled garlic clove. Cover and simmer for 3 hours over low heat. Sprinkle with chopped parsley and serve. Bonne appétit bien sur !
